This dish is one of the most beautiful vegetable dishes I have ever prepared! Simply made, the dish is delicious and a great way to get flavour into a variety of vegetables.
The key to it is ensuring you get vegetables that are similar sizes when cut into rounds so that they all stack evenly. It can be a little fiddly to arrange in the picture above, but ultimately it still didn’t take me too long!
My number one tip for this would be to buy a hand mandolin! I bought a hand mandolin similar to this one I just googled and it’s going to cut your vegetables all to the same thickness which makes for even cooking. I do however cut the tomato by hand as the mandolin tends to mush it.
This is an excellent use of seasonal summer vegetables too!
