So I’m sure you’re all familiar with banana splits, yes? Fun, delicious and generally full of sugar. I have been making this bad boy for years. Last night I had a banana that needed using up and was in the mood for a treat! Considering that banana’s are naturally high in carbs, this isn’t something I make a habit of having as I am still in weight loss mode.
However this fun, sexy (hehe, it so is tho!), grown up twist on a classic dessert is delicious on so many levels; warm, chocolatey and perfect for those cool nights in as well as being super easy to make. I topped mine with dark chocolate, whipped full fat cream and a few raspberries. Naturally if you want to go full paleo, leave out the cream and whip some coconut cream instead!

- 1.5 squares Dark chocolate (70% or more)

- Preheat your oven to 200c. Place your banana in the center of the oven, skin on, and bake for 20 minutes until the banana is completely black. Meanwhile, using a sharp knife, cut your chocolate into little shavings and whip your cream/assemble your other toppings. Once your banana is ready, take it out of the oven and place on your serving plate. Using a sharp knife, make a small cut on the side of the banana (that's facing up!) across the width of the banana, then another cut lengthwise, and then another on the other side of your width-wise cut down the length! You still following? You should be able to peel the banana skin back, revealing a little window of the beautifully steamed hot banana inside! Cut the other end so you can fully remove that little piece of skin. Sprinkle your chocolate across and let it melt on the banana whilst you top with your other choices! Delish.
