Instructions
  1. Place your chicken breasts into a pot of boiling water and poach for 20 minutes or until cooked through. Drain the water from the chicken breasts and use two forks to shred the meat apart. Set aside.
  2. Toss together your remaining salad ingredients except your cashew nuts and serve into two bowls.
  3. In a small jug, mix together your dressing ingredients until well combined.
  4. Top each salad with chicken and then dress as desired.
  5. Garnish with cashew nuts and serve.
