The name says it all. Yum. I recently made a salted caramel chia pudding from paleomg which inspired this one right here! Somehow I don’t think I’m done with chia puddings! They take about a minute to make and they’re delicious and ready to go the next day!
This one right here is trialling one of my new “superfood” ingredients that I got from iHerb – lucuma. Lucuma is full of antioxidants, vitamins and minerals. As well as being a natural sweetener, this has been described as natures caramel. Need I convince you further?

Ingredients
- 1 cup Coconut milk
- 1 tbsp Nut butter
- 1 tsp Vanilla essence
- 0.5-1 tbsp Lucuma
- 2 tbsp Honey or maple syrup if you omit lucuma
- 2 tbsp Coconut threads or desiccated
- 1/4 cup Chia seeds

Instructions
- In a bowl whisk together all ingredients except chia seeds until combined. In a small sealable jar/container, measure out your chia seeds and then pout your coconut milk mixture over top. Seal that bad boy up and then shake vigorously for 30-40 seconds. Pop her in the fridge and leave overnight (or for 8 hours until the chia has set!). Serve garnished with goji berries!
