Chicken Bites are something anyone of any age can get behind. Crunchy and delicious, these are a winner with everyone. Even better – this crumb coating can be used on fish too and shallow fried for crunch.
In this recipe, I provide both the instructions for shallow frying and oven baking. Shallow frying yields a crunchier texture, but does utilise more oil whereas none is needed for oven baking.
A real crowd pleaser with fussy kids, too! These are great to bring out at a dinner party before the meal because, let’s be honest, everyone loves crunchy chicken bites. I have marked these as weight loss friendly but I also wouldn’t recommend them by themselves for a meal (ok I will admit I’ve done this myself on more than one occasion) and to eat them every single day. Remember things like almond meal and tapioca are easy to overdo!

- 1/4 cup tapioca flour plus an extra tablespoon
- 1 egg whisked
- 1/2 cup LSA
- 1/4 cup almond meal
- 1 tsp Garlic powder
- 1 tsp smoked paprika
- 1 tsp Salt
- 1/2 tsp pepper
- 400 grams chicken breast diced into bite sized chunks
- 1/3 cup Coconut oil (optional)

- Preheat your oven to 180c and line a tray with baking paper if you wish to bake your chicken bites.
- Add your 1/4 cup tapioca into a small bowl. In a secondary bowl, have your whisked egg. In a third small bowl, mix together your remaining 1 tbsp tapioca, LSA, almond meal, garlic powder, smoked paprika, salt and pepper.
- Start by dipping your chicken into the tapioca, then into the egg followed by the LSA mix. Ensure your chicken is completely covered at each stage. Place on a tray and repeat until all chicken is done.
- At this stage you can either bake your chicken bites at 180c for around 20-25 minutes OR you can shallow fry them for a super crunchy alternative.
- If shallow frying, heat 1/3 cup coconut oil (or enough to well and truly cover the bottom of your fry pan) in a fry pan over a medium high heat. Once the oil is hot, carefully add your chicken to the pan until golden and turn until each side is golden.
- Drain on a paper towel then serve with homemade mayo or aioli and a side salad!
