PALEO/GLUTEN FREE/DAIRY FREE/WEIGHT LOSS FRIENDLY/

Whaaaat? Elora, you eat potatoes!? Why yes, yes I do. Hard to believe I know. During my weight loss days, I avoided potatoes like the plague. Why? Because they were high carb and at the time were not included in a lot of paleo peoples lives. These days, I eat potatoes quite regularly. The humble potato is delicious and in all honesty it’s carbohydrate count isn’t much different to kumara (sweet potato) and it is still full of nutrients.
I’ve marked this one weight loss friendly because well, as long as you don’t have it more than a few times a week then you’re pretty safe. It’s the same rule as kumara – I just wouldn’t be eating this on the daily but for a weekend brunch? It’s absolutely fine – and delicious.
This recipe is such good comfort food. Potatoes, bacon, eggs? What more could you want!? Plus those ingredients just scream breakfast.
If you’re able to eat dairy, this would be super tasty with cheese stirred through as well.

- 4 medium potatoes peeled
- 2 tsbp Coconut oil
- 4 rashers streaky bacon diced
- 1 large handful baby spinach
- salt & pepper to taste
- 4 eggs
Ingredients

- Dice your potatoes into 1cm thick cubes and set aside.
- In a large non-stick skillet, heat your coconut oil over a medium-high heat and then add your potatoes. Cook for around 20 minutes, stirring occasionally, until crispy on the outside and cooked through.
- Once your potatoes are cooked, add your bacon and stir until crisp and cooked.
- Add your spinach as well as salt and pepper then stir until evenly distributed.
- Make four wells in the potato mix and crack an egg into each one. Cover and let cook for around 2 minutes for a runny yolk, or 4 to be cooked through.
