Ever wondered what on earth a ‘sloppy joe’ is? I always remembered watching American programs growing up, and the kids would always be excited for sloppy joes for lunch in their cafeteria.
I never got around to making them in my bread eating days, but after being inspired by a Delish video recently – I thought I would put my own whole food twist on them.
This recipe contains liquid smoke because it can be pretty hard to find a smokey bbq sauce that’s whole food friendly. Not wanting to buy sauces loaded with sugar, I’m forever on the hunt for sauces I can use. I discovered Smugglers Cove in my local New World and now always have a bottle on hand just in case. For me, the perfect bbq sauce has that delicious smokey flavour, so I usually add a little liquid smoke to mine. I have found liquid smoke in the sauce aisle of my local supermarkets recently, but it is totally optional too. I just personally love the flavour!
These sloppy joes are definitely workplace friendly and reheatable the next day. You could definitely meal prep them, however if weight loss is your goal then I wouldn’t eat them more than 2-3 times a week. These are fab for that carb hit from the kumara and a much better source of carbohydrate than bread!

- 4 small kumara (sweet potato)
- 2 tbsp Coconut oil
- 1 Onion diced
- 500 grams mince
- 2/3 cup tomato sauce link below for recipe
- 1/3 cup bbq sauce I like the brand Smugglers Cove
- 1/2 tsp liquid smoke optional - but delicious addition
- 1 tbsp mustard
- 1 tbsp Coconut sugar
- 1 tsp cayenne pepper
- 1 tsp Garlic powder
- 1 tsp Salt
- 1/2 tsp pepper
- mayo for topping, or cheese if you're not dairy free!

- Preheat your oven to 200c. Using a fork, poke your kumara all over. Place on a baking sheet and into your oven for 45 minutes, until tender. A good indication is the skin looks like it has wrinkled a little.
- In a large pan over a medium high heat, heat your coconut oil and then add your onion. Saute until soft, then add your mince. Cook your mince until there is no pink visible.
- Add your tomato sauce, bbq sauce, liquid smoke, mustard, coconut sugar, cayenne pepper and garlic powder as well as your salt and pepper. Stir together and turn your heat to low.
- Take your now done kumara from the oven and cut a vertical slit down the centre of each one. Fill with sloppy joe mixture, and top with mayo (or cheese and pop under the grill to melt).
- Serve one kumara per person alongside a side salad or your favourite cooked vegetables.
