  1. Heat a large skillet over a medium high heat and add your coconut oil as well as your diced orange kumara. Toss to coat in coconut oil and cover to cook for 5 minutes with a lid. Ensure you flip your kumara halfway to avoid burning the bottoms.
  2. Once softened, add diced chorizo, onion and garlic and cook for a further 2-3 minutes before adding your beef mince to brown.
  3. When your beef mince is brown, add your tomatoes, tomato paste, paprika, garlic powder, cumin, cayenne pepper and salt. Stir to combine. Cook until bubbling then reduce the heat. Simmer for 5-10 minutes until beef is cooked through.
  4. Dish up and top with cooked bacon, quarter avocado and a sprinkle of spring onions.
