PALEO/GLUTEN FREE/DAIRY FREE/WEIGHT LOSS FRIENDLY/
MEAL PREP FRIENDLY/10 WEEK CHALLENGE APPROVED/FREEZABLE
When I was meal prepping, I was all about those reheatable meals. Anything I could make in bulk and refrigerate that was going to keep me full and nourished was a must. I never did too many salads and always had cooked food.
Now that I work from home, I usually make myself a salad for lunch because it’s easy however whenever I have leftovers to heat up, it’s always the best!
This spicy little number has just the right amount of warmth to it (I say warmth, not heat, because it’s actually pretty mild!) and has so many tasty flavours going on. We all know by now that I’m pretty partial to using plenty of those warm spices in my meals especially when they lend themselves to mexican/cajun/south american flavours.
So I created this delicious chilli with added chorizo and kumara. YUM. Perfect to take to work and heat up, and perfect to freeze as an emergency meal.

- 1 medium orange kumara peeled and cubed
- 2 tbsp Coconut oil
- 150 grams chorizo sausages diced - I bought verkerks
- 1 small Onion diced
- 1 clove garlic crushed and minced
- 500 grams Beef mince
- 1 can crushed tomatoes
- 2 tbsp Tomato paste
- 2 tsp smoked paprika
- 1 tsp Garlic powder
- 1 tsp cumin
- 1/2 tsp cayenne pepper
- 1 tsp Salt
- 4 rashers streaky bacon diced and cooked
- 1 avocado quartered - optional
- 1 spring onion finely sliced - for garnish

- Heat a large skillet over a medium high heat and add your coconut oil as well as your diced orange kumara. Toss to coat in coconut oil and cover to cook for 5 minutes with a lid. Ensure you flip your kumara halfway to avoid burning the bottoms.
- Once softened, add diced chorizo, onion and garlic and cook for a further 2-3 minutes before adding your beef mince to brown.
- When your beef mince is brown, add your tomatoes, tomato paste, paprika, garlic powder, cumin, cayenne pepper and salt. Stir to combine. Cook until bubbling then reduce the heat. Simmer for 5-10 minutes until beef is cooked through.
- Dish up and top with cooked bacon, quarter avocado and a sprinkle of spring onions.
