Oh yeaaah. Who says you have to miss out on your favourites whilst being paleo? I take serious joy in recreating normal meals as paleo creations. Whoever came up with the idea of cauliflower rice is a genius. I mean, how do you even think of that?
Cauliflower is seriously becoming one of the super foods in my life. Not only can you use it as rice, but you can also roast it, use it as mash, use it for a pizza base or even make it into bread! And here’s the selling point… It’s super easy to find and make into these wonderful things. So when work was coming up and I was stuck for inspiration, the $2.99 massive cauliflower head was calling my name. I used half and made cauli bread and the other half for four servings of cauli rice. One $2.99 cauliflower head has made well over 8 servings! Now that’s what I call value for money!

- 1/2 Cauliflower head
- 650 grams Chicken diced
- 1 tsp garlic
- 1 cup Veges of choice
- 5 tbsp Coconut aminos
- 1 tsp Honey
- 2 knobs Butter or Ghee

- Start by cutting your cauliflower into smaller florets, removing most of the stalk (stalk = not hugely important either way). Place in food processor and blitz until it resembles a rice like texture. Alternatively you can grate or finely dice until it resembles rice. Place your cauliflower in a large glass bowl, cover with cling film and microwave for 5 minutes. Set aside.
- In a large frying pan, heat a little coconut oil over a high heat. Throw in your finely diced onion and garlic and stir for a moment before quickly dumping your chicken on top. This will prevent your garlic from popping everywhere (Or you could be normal and put the garlic in after the chicken)! Stir around until everything is mixed up and your chicken is happily cooking away. Once almost done, add 3 tbsp of coconut aminos and drizzle your honey across. Let the coconut aminos reduce and start sticking to the chicken. Whilst it reduces, throw in the rest of your veges and let them cook until they're almost done but still have some crunch. Pop your chicken mix into a separate dish.
- Heat your butter in the same pan used for the the chicken, then throw your cauli rice on top. Stir through until the butter has been well mixed in. Season with pepper (there's enough saltiness in the coconut aminos, which are a soy replacement by the way!) then throw your remaining coconut aminos in and stir until the rice is heated and resembles your favourite take out rice. Pop your chicken back in the pan and mix through.
- I also suggest scrambling some egg in a side pan and mixing that through too. I like to serve mine topped with avocado. Delicious.
