Asian flavours are among some of my favourite flavours to recreate. I spent a few years living in Hong Kong in my childhood and ever since, my family has loved our asian cuisine. One of the main things I remember about Hong Kong (I was very young!) was always ordering Chicken and Cashew when we had lunch out. This still has to be one of my favourite dishes!
I find this salad so refreshing with the crunch of the cabbage and other raw vegetables complimented with chopped mint and a zingy dressing. So nice!
I’m assuming this is the case with most people, but me and Pad Thai go waaaaaay back. Back into a time before paleo was apart of my life and back into a time where takeaways was. Whilst Thai has some of the best options for if you’re in a pinch and out to dinner (helloooooo Massaman Curry), Pad Thai can often be loaded with sugar and excess carbohydrates.
